INGREDIENTS

  • olive oil

    1 tbsp

  • white onion, chopped

    1

  • garlic cloves, minced

    3

  • ginger, minced

    3 tsp

  • medium yellow potatoes, peeled and chopped

  • vegetable broth

    4 cups

  • salt and pepper

    to taste

  • broccoli florets

    2 cups

  • spinach

    4 cups

  • milk of choice

    1 cup

  • 1 serving 32 oz

    Instructions

    1. Heat olive oil in a large soup pot over medium heat
    2. Add onion and sauté for 5 minutes, stirring frequently, or until onion is soft/translucent
    3. Add garlic and ginger and cook for another minute
    4. Add vegetable broth, salt and pepper, and bring to a boil
    5. Turn heat to low and cover and simmer for 10 minutes, or until the potatoes are tender
    6. Add broccoli and cover and simmer for another 10 minutes or until the broccoli is tender
    7. Stir in spinach and simmer for 5 minutes or until wilted
    8. Remove from heat and let cool before transferring to BlendJet/XL Jar in batches
    9. Blend until desired consistency and then pour back into pot
    10. Add milk and season to taste with salt and pepper
    11. Heat and garnish with cream, pepitas, and fresh herbs like parsley or cilantro
    12. Enjoy!
