16 oz mascarpone cheese
3/4 cup + 2 tsp brown sugar
1 cup pumpkin puree
a few dashes pumpkin pie spice
1 cup heavy cream
1/2 tsp vanilla extract
1.5 cups cooled espresso
1/4 cup powdered sugar
28 to 32 lady fingers
To a mixing bowl, combine mascarpone cheese, brown sugar, pumpkin purée + a few dashes of pumpkin pie spice.
Add in heavy cream + vanilla, then whip again until mousse-like texture.
To your BlendJet, combine 1.5 cups cooled espresso and combine for 1 cycle.
Dunk ladyfingers in espresso mixture, and line baking dish.
Spread 1/2 of pumpkin mixture on top of ladyfingers, then repeat each layer.
Refrigerate for at least 4 hours, then top with pumpkin pie spice for garnish & enjoy!
