Pumpkin Tiramisu

  • 16 oz mascarpone cheese
  • 3/4 cup + 2 tsp brown sugar
  • 1 cup pumpkin puree
  • a few dashes pumpkin pie spice
  • 1 cup heavy cream
  • 1/2 tsp vanilla extract
  • 1.5 cups cooled espresso
  • 1/4 cup powdered sugar
  • 28 to 32 lady fingers
  1. To a mixing bowl, combine mascarpone cheese, brown sugar, pumpkin purée + a few dashes of pumpkin pie spice.
  2. Add in heavy cream + vanilla, then whip again until mousse-like texture.
  3. To your BlendJet, combine 1.5 cups cooled espresso and combine for 1 cycle.
  4. Dunk ladyfingers in espresso mixture, and line baking dish.
  5. Spread 1/2 of pumpkin mixture on top of ladyfingers, then repeat each layer.
  6. Refrigerate for at least 4 hours, then top with pumpkin pie spice for garnish & enjoy!
