Pecan Pie Energy Bites

Servings:

  • 1/3 cup oat flour
  • 1 cup Medjool pitted dates (soaked overnight)
  • 2 cups pecans
  • Pinch salt
  1. Soak pecans in hot water with a pinch of salt for 5+ hours or overnight
  2. Rinse and drain
  3. Blend the pecans, a pinch of salt, and pitted dates until smooth.
  4. Blend, cover, and refrigerate for a couple of hours to make it easier to roll the balls
  5. Roll the mix into balls and dip in melted dark chocolate
  6. Put back in the fridge for a few hours
  7. Enjoy!
