INGREDIENTS

  • Pear

    1

  • Sugar

    3 Tbsp

  • Vanilla bean

    1

  • Salt

    1 Pinch

  • Water

    1 cup

  • Vanilla Pear Syrup

    4 oz

  • Ginger concentrate

    1 oz

  • Sparkling water

    7 oz

  • Fresh lime or lemon juice

    A squeeze

    Instructions

    1. Chop the pear into small pieces.
    2. Combine pear, sugar, split vanilla bean, a pinch of salt, and water in a small stock pot. Bring to a boil.
    3. Let simmer for 5 minutes to reduce by about 1/2.
    4. After removing from heat, blend the mixture, then strain through a fine mesh strainer.
    5. Pour into a glass jar, let cool, then seal and label.
    6. Store in the refrigerator.
    7. Fill a cocktail shaker with ice cubes.
    8. Add 4 oz of Vanilla Pear Syrup, ginger concentrate, water, and a squeeze of lemon or lime juice to the shaker.
    9. Shake vigorously for about 30 seconds.
    10. Add ice to each chilled glass. Strain the mocktail mixture evenly into the glasses.
    11. Garnish each glass with a slice of pear and serve.
