3 corn kernels
1/2 cup full fat coconut milk
1/4 cup melted butter of choice
1/4 cup granulated sugar
2 eggs
splash vanilla extract
2 cups glutinous rice flour
1 tsp baking powder
Pinch salt
Preheat oven to 350F. Butter 9x9 square baking dish.
Add corn kernels & coconut milk to BlendJet. Blend for 2 cycles.
In a medium bowl, whisk corn milk mixture with melted butter, sugar, eggs & vanilla.
In another large bowl, whisk rice flour, baking powder & salt.
Pour mixture into prepared pan & bake for approx. 45-60 minutes, until edges are golden brown & center bounces back.
