  • 3 corn kernels
  • 1/2 cup full fat coconut milk
  • 1/4 cup melted butter of choice
  • 1/4 cup granulated sugar
  • 2 eggs
  • splash vanilla extract
  • 2 cups glutinous rice flour
  • 1 tsp baking powder
  • Pinch salt
  1. Preheat oven to 350F. Butter 9x9 square baking dish.
  2. Add corn kernels & coconut milk to BlendJet. Blend for 2 cycles.
  3. In a medium bowl, whisk corn milk mixture with melted butter, sugar, eggs & vanilla.
  4. In another large bowl, whisk rice flour, baking powder & salt.
  5. Pour mixture into prepared pan & bake for approx. 45-60 minutes, until edges are golden brown & center bounces back.
