  • 2 cups carrots
  • 1/2 small white onion, finely chopped
  • 2 cloves garlic
  • 1-inch piece fresh ginger
  • 1/2 cup vegetable broth
  • 1 Tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  1. Preheat your oven to 375°F (190°C). Place the carrots, onion, garlic, and ginger on a baking sheet.
  2. Sprinkle fresh rosemary, sea salt and black pepper. Roast for 30-35 minutes until veggies are tender and slightly caramelized.
  3. Transfer the roasted veggies to your BlendJet after cooling, and blend until silky smooth with honey & veggie broth. Adjust seasoning if needed.
  4. Pour into two bowls, garnish each with parsley, cottage cheese, and enjoy!
