INGREDIENTS

8 slices
butter of choice
for spreading
potato

Cucumber
1 cup
tomato
1
red onion
1
cilantro chutney
4-6 tbsp
Chaat masala
to sprinkle (optional)
Salt and freshly ground pepper
To taste
fresh cilantro
1 cup, tightly packed
fresh mint
1/2 cup
green chilies
1-2
lemon juice
1 tbsp
grated ginger
1 Tbsp
salt
to taste
water

Instructions
In a blender or food processor, combine cilantro leaves, mint leaves, green chilies, lemon juice, grated ginger, and salt.
Add a little water and blend until you get a smooth paste. Adjust consistency by adding more water if needed. Set aside.
Lay out the bread slices on a clean surface.
Spread butter evenly on one side of each slice.
On 4 slices of bread (butter side up), spread a generous amount of cilantro chutney.
Place a layer of potato slices on top of the chutney.
Next, layer cucumber slices, tomato slices, and onion slices on top of the potato.
Sprinkle chaat masala, salt, and black pepper over the vegetables according to taste.
Top each sandwich with the remaining slices of bread (butter side down).
Press gently.
Serve
