Blueberry Avocado Muffins
You have to try these muffins! They are the perfect breakfast side or snack for busy days.
INGREDIENTS
applesauce
1/2 cup
Maple Syrup
1/4 cup
egg
1
olive oil
1/4 cup
vanilla extract
1 tsp
avocado
1/2
almond flour
1 cup
rolled oats
1/2 cup
baking soda
1 tsp
baking powder
1/2 tsp
fresh or frozen blueberries
1 cup

Instructions
- Preheat oven to 350 F.
- All wet ingredients into BlendJet and blend.
- In a separate bowl, add the rest of ingredients (except blueberries) and mix.
- Add the wet batter to the dry and combine.
- Fold 1/2 cup of blueberries.
- Pour the batter into the mini muffin tins.
- Bake the muffins for 20-23 minutes or until a toothpick inserted in the center comes out clean.
- Store leftover muffins in and airtight container and freeze.
- If you don’t want to use maple syrup, remove it completely or add less.
