INGREDIENTS

  • applesauce

    1/2 cup

  • Maple Syrup

    1/4 cup

  • egg

    1

  • olive oil

    1/4 cup

  • vanilla extract

    1 tsp

  • avocado

    1/2

  • almond flour

    1 cup

  • rolled oats

    1/2 cup

  • baking soda

    1 tsp

  • baking powder

    1/2 tsp

  • fresh or frozen blueberries

    1 cup

  • 1 serving 25 oz

    Instructions

    1. Preheat oven to 350 F.
    2. All wet ingredients into BlendJet and blend.
    3. In a separate bowl, add the rest of ingredients (except blueberries) and mix.
    4. Add the wet batter to the dry and combine.
    5. Fold 1/2 cup of blueberries.
    6. Pour the batter into the mini muffin tins.
    7. Bake the muffins for 20-23 minutes or until a toothpick inserted in the center comes out clean.
    8. Store leftover muffins in and airtight container and freeze.
    9. If you don’t want to use maple syrup, remove it completely or add less.
