If you want to incorporate more healthy plant-based options into your diet in 2020, here's the perfect vegan healthy ranch dressing recipe for you! Simply add coconut milk, cashews, lemon juice, and spices to your BlendJet portable blender and blend! This healthy ranch dressing is perfect for serving with a colorful plate of veggies at parties or at a family dinner.

 

Ingredients

1/2 cup full fat coconut milk

1/4 cup cashews

2 tablespoons lemon juice

2 tablespoons parsley

1/2 clove grated garlic

1/2 teaspoon salt

1/16 teaspoon black pepper

1/4 teaspoon onion powder 

1/4 teaspoon dill

 

Instructions
  1. Add 1/2 cup full fat coconut milk and 1/4 cup cashews to your BlendJet and blend.
  2. Add 2 tablespoons lemon juice, 2 tablespoons parsley, 1/2 clove grated garlic, and 1/2 teaspoon salt.
  3. Screw on the lid to your BlendJet Portable Blender and blend until smooth!
  4. Refrigerate 1 hour to thicken.
  5. Serve with fresh veggies!

Looks delicious! I use the Trader Joe’s reduced fat coconut milk for making coconut rice, which is really yummy. The only thing missing is the nutritional values. It looks like it would also go well with buffalo wings… Hmmm, spicy coconut wings.
